Hy-Vee apple-themed recipes

WATERLOO (KWWL)-- Hy-Vee dietitian Heidi Oberrieder stopped by Friday with some great apple-themed recipes.

Apple Blueberry Granola

All you need:
5 c. Hy-Vee old-fashioned oats
1 c. Hy-Vee walnut pieces
1 c. Hy-Vee pecan pieces
2 tsp apple pie spice
1/4 tsp Hy-Vee salt
1/2 c. Hy-Vee unsalted butter
1/2 c. Hy-Vee honey
1/4 c. packed Hy-Vee brown sugar
1 c. chopped Hy-Vee dried apple slices
1 c. Hy-Vee dried blueberries
Anderson EricksonTM low-fat yogurt, optional

All you do:

  1. Preheat oven to 300 degrees. In a large bowl, stir together oats, nuts, apple pie spice and salt.
  2. In a small saucepan, over low heat, melt butter, honey and brown sugar. Pour butter mixture over oat mixture. Toss to combine.
  3. Line 2 large, rimmed baking sheets with parchment paper. Spread granola evenly over baking sheets. Place pans in the upper and lower thirds of oven. Bake for 20 minutes, stirring every 5 minutes. Halfway through baking, move the top pan to the bottom and the bottom pan to the top to assure even cooking.
  4. In a large bowl, combine granola with apples and blueberries. Cool on countertop, stirring occasionally. Store in an airtight container. Serve with your favorite Anderson EricksonTM low-fat yogurt, if desired.

Baked Stuffed Apples

All you need:
4 medium Jonagold or Golden Delicious apples, cored
1/4 c. flaked coconut
1/4 c. chopped dried apricots
2 tsp grated orange zest
1/2 c. orange juice
2 tbsp packed brown sugar

All you do:

  1. Peel top 1/3 of apples.
  2. Arrange apples, peeled-end up, in a microwave-safe baking dish.
  3. Combine coconut, apricots and orange zest.
  4. Divide mixture and evenly fill centers of apples.
  5. Combine orange juice and brown sugar. Pour over apples.
  6. Cover tightly with vented plastic wrap.
  7. Microwave on HIGH for 7 to 8 minutes or until apples are tender. Cool before serving.

Apple Berry Crisp

All you need:
5 whole Washington Golden Delicious apples, peeled, cored & sliced
2 c. fresh Ocean Spray cranberries
3/4 c. packed brown sugar, divided
1 1/2 tsp cinnamon, divided
1/3 c. all-purpose flour
5 tbsp butter
1/3 c. quick oats
1/4 c. Almond Accents original oven-roasted almond slices

All you do:

  1. Preheat oven to 375 degrees. Lightly grease an 11-by-7-inch baking dish.
  2. In a large bowl, combine apples, cranberry, 1/4 c. brown sugar and 1/2 tsp. cinnamon. Toss to blend.
  3. Place apple mixture in baking dish.
  4. In a medium bowl, combine flour, remaining 1/2 c. brown sugar and remaining 1 tsp. cinnamon.
  5. With pastry blender, cut in butter until mixture is crumbly.
  6. Stir in oats and almonds.
  7. Sprinkle mixture over apples.
  8. Bake 40 to 45 minutes at 375 degrees until apples are tender and topping is golden.
