Food Guru: Caribbean Pork Loin

(KWWL)-- The Food Guru is going south to the Caribbean in Saturday's Food Guru Moment.

Were going to start with a bone in pork loin. Were going to season it with soy sauce, and then my Caribbean spice, which is a blend of salt, pepper, garlic, and then a little cinnamon, and nutmeg. Were going to sprinkle that with a little chopped cilantro, and then were going to give it a real nice rub down. Were going to add a little water to the roasting pan. The water's going to do two things; first it's going to create a little liquid for the sauce, and second, it's going to keep the sauce nice and juicy. Were going to roast the pork at 355-degrees until it hits an internal temperature of 155-degrees, which should take about an hour. And now for the fun part. Let's make a great sauce to complement the pork. Start with one jar with mango grade Chutney, and add chopped pineapple, diced green onions, raisons, fresh chopped cilantro, and a little more Caribbean spice. Take a little bit of the natural pork juice an pour it over the top. Now were cookin'! This is roast Caribbean pork loin.
