Microbrewery to open in Dubuque's Millwork District

Posted: Updated:

A unique microbrewery will soon open in Dubuque.

It's called 7 Hills Brewing Company.

"We just have one goal down here, making world class beer for Eastern Iowa, which means beer with no off flavors, true with style parameters, tasty suds for the people of Iowa," said Sean Carter, head brewer.

Four friends decided to open the brewery in the Millwork District. The business is located on East 11th and Washington Streets.

Seven craft beers will be available year round, also some seasonals, but there's a lot more. "We have a full kitchen," said Megan Carter, general manager. "We're gonna be serving from scratch bar food, so burgers, sandwiches, soups, salads, pretzel crust pizzas. We wanted to take some great food and just put our own twist on it, make it a little different."

There is also a stage for live entertainment.

The founders invested a lot of time and effort renovating an old warehouse into an urban, but rustic open concept design, inspired by breweries in larger cities.

"Our goal was cohesion, unity, which was pretty difficult to take a restaurant, a brewery, and a place for entertainment and make it all, make the flow consistent," said Keith Gutierrez, owner.

Ultimately, the founders want to provide a friendly atmosphere. "We have beer house style seating, so we want people to mingle and talk, talk about the beers, meet each other, it's a sense of community and friends," Megan said.

7 Hills Brewing Company will soon start distributing their beers to stores and bars in Dubuque. Once the brand is established, they hope to expand to Cedar Rapids, Iowa City and the Quad Cities.

The microbrewery officially opens Monday, Aug. 21.
