Waterloo SingleSpeed Brewery nearing end of construction

The new SingleSpeed Brewery in the heart of downtown Waterloo is coming along. Owners say they hope to start production next month.

There's no beer quite yet, but SingleSpeed Founder Dave Morgan says they are nearing the end of constriction. He plans to start the production phase in November. 

"The varieties we'll be making, we'll make more of," said Morgan. "And we'll experiment with new ingredients, more raw materials."

At a whopping 35,000 square feet, this brewery will be making a lot more beer.

"Currently in Cedar Falls, we produce about 400 barrels a year," said Morgan. "Phase one of our production over here is to go to 4,000 and this room is built to hopefully get us to 12-14,000 by 2020. We have to make sure the demand is here for that."

Fermenting tanks have started to come in, but the goal is to fill the entire cellar with tanks. 

Inside, you'll find more than just beer.

"The full service restaurant is something that is very exciting for us," said Morgan. "To get to support local farms and bring stuff, farm to table is exciting."

Beer connoisseurs will also be able to satisfy their coffee fix. Local find Sidecar Coffee will be moving in as well. 

As the old Wonder Bread building gets a makeover, Morgan says there's a lot of the buildings character they had to keep, like hardwood flooring, in order to preserve the buildings rich history. 

Morgan says the beer garden will be open for business by the middle of next year.  

The public can get a look at the progress during tomorrows Tour de'Loo.
