Residents and chefs in Italy are urging restaurants to serve more pasta all'amatriciana.

By serving this dish, restaurants will be supporting the hometown of the dish that was hit by the earthquake this week, Amatrice.

The idea behind the initiative is for some of the proceeds to help the devastated areas rebuild.

Italian food blogger and graphic designer, Paolo Campana, asked restaurants to put the dish on their menus and $2.25 per dish will be sold directly to the Italian Red Cross, which is participating in relief efforts in the affected areas in Central Italy.

In Rome, the initiative has been picked up by several restaurants. The initiative seems to be largely supported by clients.
