Roasted Butternut Squash with Feta cheese, maple drizzle

  Roasted Butternut Squash & Feta Cheese w/ Maple Drizzle, Balsamic Reduction and Toasted Almonds
 
Servings: 8-10 ppl.
 
Ingredients:       1 large butternut squash
                                1 cup of toasted “sliced” almonds
                                1 cup of feta cheese
                                1 oz. of high quality maple syrup
                                .5 oz. of balsamic reduction
                                .5 cup of extra virgin olive oil
                                salt & pepper to taste
 
 
Directions:          Take your butternut squash and cut the top and bottom off.  Take the a peeler and peel the squash until it’s a bright orange color.  Remove the
seeds with a big spoon or a melon baller.  Now, carefully slice up the butternut squash in to 1” pieces. Place squash pieces in to a bowl  and pour  olive oil with salt and pepper all over and rub in to squash. Preheat oven to 350 degrees.  Now, pour all the squash pieces on to a baking sheet and bake for about 25-35 minutes.  They are done when you’ll see some browning and fork tender.  Now, place the squash in a serving bowl gingerly.  Add the feta cheese all over the top of the dish.  Now, drizzle the maple syrup on top of squash followed with the balsamic  reduction and finally topped with the almonds.
