Hyvee: Black Bean Mango Quinoa Salad

Black Bean Mango Quinoa Salad 

Serves 6 

Source: Hy-Vee Dietitians 

All you need: 

4 tbsp red wine vinegar 

3 tbsp olive oil 

1 tbsp fresh lime juice 2 c. cooked red quinoa (at room temperature or cold) 1 mango, peeled, seeded and diced 

1 handful chopped cilantro 

1 (15 oz) can black beans 

1 red bell pepper, chopped 

6 green onions, thinly sliced 

All you do: 

1. In a small bowl, combine vinegar, oil and lime juice. 

2. Combine remaining ingredients in a large bowl.  Drizzle dressing over the salad, and toss until well combined.  Chill for about an hour. 

Nutrition per serving: 240 calories, 7 g protein, 34 g carbohydrate, 8 g fat (1 g saturated  fat), 10 mg sodium, 7 g dietary fiber, 9 g sugar.
