Pan seared Halibut Filet with Mediterranean sauce

Ingredients

1 Halibut filet 6-8 oz

Olive oil

¼ C grape tomatoes

2T black olives

1T Capers

1t Red onion

1t garlic

2t fresh Thyme

¼ C White Wine

¼ C Butter

Salt and pepper

How to Make: 

-Heat saute pan  with olive oil and place dry, seasoned fish in pan. Sear both sides to golden.

-Remove fish and add Onion,garlic,capers,tomatoes,olives,and thyme. Saute until onions are tender.

-Deglaze pan with white wine and reduce

-add fish and butter to pan and remove when sauce is thick
