Chef William: Baja California Shrimp Tacos

Baja California Shrimp Tacos

Servings:             4-6 servings

Ingredients:       Shrimp

                                1 pound of 51-60 ct. “peeled & deveined” tail-off

                                ½ sick of butter

                                Taco or fish taco seasoning

                                Squeeze of lime juice

                                Salsa

                                1 red bell pepper “diced”

                                1 green bell pepper “diced”

                                1 orange bell pepper “diced”

                                ½ red onion “diced”

                                2 tomatoes “diced”

                                ½ cup of lime juice

                                1 tsp. of ground cumin

                                Salt & Pepper to taste

                                Baja Sauce

                                2 oz. of mayonnaise

                                4 oz. of sour cream

                                3 tbsp. of lime juice

                                1 tsp. of ground cumin

                                Slaw

                                ½ red cabbage “sliced very thinly”

                                ½ red bell pepper “sliced very thinly”

                                1 qt. of distilled white vinegar

                                1 cup of sugar

                                Tortillas of your own choice

Directions:          First season shrimp with the taco seasoning and let rest on counter top for 1 hour. Now, make your salsa and Baja Sauce.  Take all your prepped ingredients and mix together and cover in fridge.  For your Baja sauce, just mix all ingredients together and place in fridge as well.  Slaw same instructions, mix together and place in fridge.

Now, melt butter In a skillet on medium-high heat.  Moving shrimp around frequently.  The shrimp will be fully cooked when they are opaque and no longer translucent.  Now, just warm your tortillas and assemble tortilla, shrimp, salsa, Baja sauce and slaw.  The textures and flavors combined are a roller coaster of California Bliss.
