Honey Citrus Cheesecake

Filling:
(4) 8 oz. packages of cream cheese
2/3 cup Honey
½ cup sugar
1 Tbsp. Escape Route Beer
4 eggs, beaten
2 tsp. grated orange zest
2 tsp. grated lemon zest

Crust:
1 ½ cups graham cracker crumbs
½ cup sugar
¼ cup finely chopped walnuts (optional)
¼ cup melted butter
½ tsp. ground cinnamon


1. Preheat oven to 350 F. Grease bottom and sides of 9 in. spring form pan.

2. In a bowl mix graham cracker crumbs, sugar, walnuts, and cinnamon. Add melted butter and mix. Press into sides of spring form pan.

3. Beat cream cheese, sugar, honey, and beer together, add 1 egg at time. DON'T OVERBEAT. Stir in gently orange zest and lemon zest.

4. Pour into prepared pan. Bake for 60 minutes. Shut off oven and let cake cool in oven with door closed for 5-6 hours.

5. Chill in refrigerator.
