Ingredients: Cod portions 6oz 2ea 2 tablespoons brown sugar 3 tablespoons lime juice 2 tablespoons rice wine vinegar scallions
Instructions: -Dry fish with paper towels and season -Heat olive oil in a pan until hot but not smoking -Place filets in pan and do not attempt to move around -After 4-5 minutes the fish should shake loose, if not, carefully use spatula to turn -Fish should take 10 min to cook, or until flaky and not translucent
Sauce: -combine all ingredients with the exception of the scallions -place on heat in small sauce pan until thick, stirring frequently, 3-5 min
