Palo 8-year-old recognized by First Lady for healthy recipe

Palo student Anabel Bradley is only 8 years old, but she's already been recognized by First Lady Michele Obama.

This summer, Anabel was one of 54 students whose recipe won her a trip to Washington, D.C., as a part of the annual Healthy Lunchtime Challenge and Kids State Dinner.


When Anabel arrived at the capital, she made her favorite dish, Over the Rainbow Veggie Pancakes.

 

On Saturday, Nov. 1, Anabel and her mother Julie will finish their 3-part cooking class at the Kirkwood Culinary Kitchen at NewBo Market in Cedar Rapids.

She will come equipped with a menu that includes her signature savory pancakes.

The hour-long class will begin at 11 a.m.

 

The classes are a part of the Healthy Lunchtime Challenge program that is co-sponsored by Michelle Obama and Epicurious. 

 

"We are so honored to have Anabel visit the market," said NewBo's Executive Director Kristie Wetjen. "She's inspiring kids across the nation to eat better – she's showing them that good food can be healthy and tasty."

 

Anabel will also prepare the following dishes with the help of her mother and gluten-free baker Anna Sobaski:


- Pumpkin hummus with homemade pita chips

- Homemade applesauce

- Fruit and cheese mini kabobs

- Over the Rainbow Veggie Pancakes
