Simple Shepherd's Pie
Makes 4 servings
Total time: 45 minutes
1 pound 85% lean ground beef
4 cups potatoes, peeled and diced
1 cup carrots, peeled and diced
1 cup water
1 (1.25 oz.) packet dry onion soup mix
2 Tbsp. milk
1 Tbsp. butter
Fresh thyme, optional
PREHEAT oven to 400⁰F. COOK potatoes in boiling salted water until tender. Meanwhile, BROWN ground beef in a skillet and DRAIN well. ADD carrots and water to ground beef and SIMMER for 10 minutes. ADD onion soup mix and STIR well. COOK until slightly thickened, about 10 minutes. DRAIN potatoes and MASH with butter and milk until smooth. ADD beef mixture to baking dish and TOP with mashed potatoes. SMOOTH potatoes with a fork. BAKE for 20 minutes, or until potatoes begin to brown. REMOVE from oven and sprinkle with thyme, if desired.

4 ounces cooked corned beef brisket*
1 Tbsp. butter
4 slices Amana rye bread
2 slices Shullsburg Swiss cheese
½ cup Fareway sauerkraut, drained
¼ cup Thousand Island dressing
BUTTER one side of bread slices. On unbuttered side, evenly SPREAD Thousand Island dressing. On 2 slices of bread, TOP with 1 slice cheese, corned beef and sauerkraut. GRILL sandwiches over medium heat in a skillet, buttered sides out. COOK until both sides are golden brown, about 5 minutes per side.

*To prepare brisket - Place brisket and spice packet in a large stock pot covered with water. Bring to a boil, then simmer for approximately 6 hours, or until brisket is fork tender.
