A tasty 2014 can be as simple as one-pot meals that don't need any attention. You know what that means - it's time to get out your crockpots! Since time seems to be on the short side, use your crockpot or slow cooker to have leftovers for mouthwatering meals all week. Besides being exceptionally convenient, your crockpot also holds some hidden healthy benefits: since you don't add any fat to most recipes, it's a fabulous way to cook lean meats until they fall apart with a fork.
Crockpot cooking uses low, slow heat to tenderize and flavor affordable cuts of meat, like boneless beef stew meat, beef arm cut roasts and boneless pork loins with minimal effort. When filling your crockpot, it should be about 2/3 full; less than ½ full and there's a good chance your meal will burn, more than ¾ full and the food won't cook evenly or in the directed time. And no peeking! It will take your crockpot about 20 minutes to reheat after you take the lid off, so only open it 30 to 45 minutes before the low end of the cooking range to check for doneness.
Cookies Crockpot Pulled Pork
Total time approx. 6 - 10 hours
3 - 4 pounds boneless pork loin, sliced into 1" thick slices
2 large onions, sliced
1 cup ginger ale
1 tsp. Cookies Flavor Enhancer
1 (18 ounce) bottle Cookies Sweet Hickory BBQ sauce
SEASON pork with flavor enhancer. PLACE one sliced onion on the bottom of the crock pot, then ADD pork. COVER with another sliced onion. ADD ginger ale, COVER and COOK on low for 8 hours (high for 4 hours), or until the internal temperature reaches 145⁰F. REMOVE pork, STRAIN and SAVE onions, and DISCARD all liquid. SHRED pork with two forks and RETURN pork and onions to the crock pot. ADD BBQ sauce and CONTINUE to cook on low for 2 more hours. SERVE on buns or rolls with additional BBQ sauce.
TIP: Freeze ready-made sandwiches by wrapping in clear plastic wrap and aluminum foil. To reheat, remove the wrapping and wrap in a paper towel. Heat in the microwave for 1 to 2 minutes, or until heated through.

2 pounds boneless beef stew meat, cut into 1" cubes
¼ cup all-purpose flour
½ tsp. salt
½ tsp. black pepper
1 clove garlic, minced
1 bay leaf
1 tsp. paprika
1 tsp. Worcestershire sauce
1 onion, chopped
1 ½ cups beef broth
8 bite sized potatoes, quartered
4 carrots, sliced
1 stalk celery, chopped
In a bowl, COMBINE flour, salt and pepper and COAT meat in the mixture. PLACE meat in the crockpot and add remaining ingredients. COVER and COOK on high for 4 to 6 hours, or on low for 10 to 12 hours.
