WATERLOO (KWWL) -

Watermelon is a terrific summer treat. Hy-Vee Registered Dietitian Brian Scheil shared some recipes with the KWWL News at Noon.

Watermelon Cake

All you need:

1 medium-large oval or oblong watermelon (seedless)

Cutting board

Sharp kitchen knife

Oversized star-shaped cookie cutter

Paper towels

Cake stand

16 ounces whipped cream or light frosting

8 ounces blueberries

8 ounces strawberries

Powdered sugar

All you do:

Wash the watermelon under cool running water and pat dry.

Cut a 3-inch thick slice from the center of an oblong, seedless watermelon. Place flat on a cutting board and use an oversized star-shaped cookie cutter (or sharp kitchen knife) to cut a star shape. Set on paper towel to drain excess water.

Place on a serving dish or cake stand.

Pipe whipped cream or a light frosting between the bottom edge of the star and the plate. Dot with blueberries.

Frost the cake with topping and arrange blueberries and cut strawberries on top. Sprinkle with powdered sugar and serve.

Watermelon Strawberry Mint Salsa Serves 4

All you need:

1 cup diced watermelon (seeds removed)

¾ cup diced strawberries

¼ cup diced red onion

2 tablespoons chopped fresh mint leaves

2 tablespoons diced seeded jalapeno chili

1 tablespoon lime juice

1 teaspoon sugar (optional, to taste)

All you do:

Gently stir together all ingredients in bowl.

Let stand to blend flavors, about 1 hour.

For a dynamite combination, serve salsa with Caribbean or jerk seasoned grill items, or with pretzels.

Nutrition Facts per serving: 45 calories, 0 g fat, 0 g saturated fat, 0 g trans fat, 0 mg cholesterol, 0 mg sodium, 11 g carbohydrates, 2 g fiber, 7 g sugar, 1 g protein.

Daily Values: 10% vitamin A, 60% vitamin C, 2% calcium, 4% iron.
