Some ground turkey linked to salmonella

One person is dead and 76 more have become sick from a salmonella outbreak.  The trouble is, all the FDA knows is that the outbreak likely started with ground turkey. 

Wednesday, the USDA announced a recall of 36 million pounds of Cargill ground turkey, linked to the death, in California.

So should you avoid eating ground turkey?  Experts we talked with say no—you can keep eating it.  The important thing to keep in mind is that proper food handling can kill off bacteria, like salmonella, that may be in your food.

Ground turkey is becoming a popular, healthy alternative to other meats.  But some people might gobble at the white meat now that the FDA is investigating a salmonella outbreak linked to ground turkey.  The good news is, it's pretty easy to increase your odds of not getting sick from it.

"I don't know that people realize they've got about one hour, especially in this hot summer weather, for the grocery shopping trip to the fridge at home:  so one hour to get that food stored properly.  That'll prevent the bacteria from growing and multiplying," said registered dietician Crystal Petersen.

It's also good to store raw meat at the bottom of your fridge, so it doesn't drip onto other foods.  And most important, always cook turkey to a temperature of at least 165 degrees.

"And the only way you know that turkey is done is with a thermometer.  You can't guess.  You can't look.  You have to use a food thermometer," Petersen said.

But if you still suspect you may have eaten ground turkey infected with salmonella, the symptoms will likely be minor.

"Within 4 to 6 hours, people may start having symptoms of nausea, vomiting, and then over 10 hours or so, they may have diarrhea," said Dr. Carline Quander, Covenant Clinic gastroenterologist.

In most cases, salmonella will run its course without medical treatment.  But children and seniors who may have exposed to the bacteria may want to see a doctor, since their immune systems can't easily handle the bacteria.  And for anyone who experiences severe symptoms…

"Dizziness, feeling like they're going to lose consciousness, certainly, or severe pain, or if they develop blood in the stool, those are reasons definitely to seek medical attention," Dr. Quander said.

But again, if you practice safe food handling, including hand washing before working with raw meat, there's a good chance you'll avoid getting sick.

Salmonella infections from food are very common, affecting more than 1.4 million people each year.  It can result from eating any animal based product, and is often related to improper food handling.

WASHINGTON, August 3, 2011 - Cargill Meat Solutions Corporation, a Springdale, Ark. establishment, is recalling approximately 36 million pounds of ground turkey products that may be contaminated with a multi-drug resistant strain of Salmonella Heidelberg, the U.S. Department of Agriculture's Food Safety and Inspection Service (FSIS) announced today.
