Back-to-School Lunch Makeover

The new school year is just around the corner, which means it is time to start thinking about school lunches. If you plan to pack school lunches this coming school year, how do you know that your child's lunch won't end up in the garbage? Follow these simple "Brown Bag ABCs" and you will have a healthy, nutritious lunch that your child will ENJOY eating!

Ask. Invite your child to help prepare his or her lunch. Sit down TOGETHER at the beginning of the week to decide what days he/she wants to eat school lunch and plan lunch for the other days he/she will take a lunch. Planning ahead will help you avoid arguments, prevent the morning panic routine and increase the likelihood that your child won't trade his vegetables for a brownie!

Bargain. Teaching your child about nutritious foods is part of your job when you are providing your child with healthy meals. Your best bet is to help your kids learn to BALANCE their high-calorie/-fat favorites with more nutrient-rich foods. Make sure to include one or two protein foods, one grain food, one or two fruits and/or vegetables, and of course a healthy beverage. And include a dessert or sometimes food, but remember that balance is key and so is moderation, so one a day is plenty.

Homemade Champion Chicken Sandwich

Serves 1

All You Need:

2 slices Arnold Select Honey Wheat Sandwich Thins

1 romaine lettuce leaf

2-3 red bell pepper rings, thinly sliced

1 slice Draft 2% cheddar cheese

2 ounces All Natural, All White Meat, Savory Roasted Chicken Breast

Freshly ground Hy-Vee black pepper

1 tablespoon Homemade Ranch Sauce (Recipe below)

2 slices ripe tomato

Alfalfa sprouts, optional

All You Do:

On one sandwich thin, layer lettuce, pepper rings, cheese slice and chicken. Sprinkle chicken with black pepper. Spoon ranch sauce over chicken. Top with tomato, alfalfa sprouts and remaining sandwich thin.

Homemade Ranch Sauce:

Combine 8 ounces fat-free sour cream with half of 1.1-ounce packet Hidden Valley Fiesta Ranch dry dip mix.

Nutrition facts per serving: 340 calories, 12g fat, 4.5 g saturated fat, 0 g trans fat, 55 mg cholesterol, 840mg sodium, 32g carbohydrates, 7 g fiber, 7g sugar, 27g protein.


Summertime Sub Sandwich Kabobs

Serves 4

All You Need:

4 (10-inch long) Hy-Vee bamboo skewers

1 slice Hy-Vee cooked salami, cut into fourths

2 Hy-Vee Kosher baby dill pickles, halved crosswise

4 Hy-Vee Colby Jack cheese cubes

1 slice Di Lusso™ sliced smoked turkey, rolled and cut into fourths

2 grape tomatoes

4 Midwest Country Fare large pitted ripe olives

1 tbsp unsalted butter, softened

1 tsp dried dill weed

4 Hy-Vee hot dog buns (preferably whole wheat)

All You Do:

Thread each skewer with salami piece, dill pickle half, cheese cube, turkey segment, tomato and olive. Place in re-closeable plastic bag and refrigerate.

Combine softened butter with 1 tsp dill weed. Spread 1 tsp butter mixture onto each bun. Place buns into another re-closeable bag.

When ready to serve, remove contents of bags and place 1 skewer on each bun. Press down on the bun to slide out skewer.


Grilled Peanut Butter and Peach Sandwiches

Serves 2

All You Need:

¼ cup Hy-Vee creamy peanut butter

2 teaspoons Hy-Vee honey

Pinch of Hy-Vee cinnamon

1 medium peach, peeled, pitted and thinly sliced

4 slices Hy-Vee or Amana whole wheat bread, divided

All You Do:

In a small bowl, combine peanut butter, honey and cinnamon. Stir in the peaches.

Divide mixture between 2 slices of bread. Place peaches on mixture in a single layer; top with remaining slices of bread.

Preheat large nonstick skillet over medium heat. Spray with butter-flavored cooking spray.

Place sandwich on skillet. Cook for 2 to 3 minutes or until bread is golden brown.

Spray top of bread with butter-flavored cooking spray and flip sandwich over. Cook for an additional 1 to 2 minutes or until bread is golden brown.

Cut each sandwich in half and serve immediately.


BBQ Ranch Chicken Wrap

Serves 4

All You Need:

¼ cup light ranch dressing

¼ cup BBQ sauce

4 (8-inch) flour or whole wheat tortillas

10 oz skinless chicken chunks

2 cups shredded lettuce

½ cup shredded 2% cheddar cheese

½ cup shredded carrots

All you do:

Mix the ranch dressing and BBQ sauce.

Place 1 tbsp down the center of each tortilla.

Divide the remaining ingredients between the tortillas.

Drizzle an additional tbsp of the dressing mixture on top.

Roll and fold filled tortilla.
