Sweet Tooth: Cheesecakes Galore in Arlington

ARLINGTON (KWWL) BilliJo Eckheart started Cheesecakes Galore by accident.

She bought a spring form pan at a garage sale because she thought it would be fun to make cheesecakes.

Initially, she made the dessert for family and friends. Then she donated a cheesecake a month for a year to a church auction.

"It went really well and somebody mentioned oh you should do one for Valentine's Day and it was a big hit and it went from there," said BilliJo Eckheart.

Since then, she's made cheesecakes for almost every occasion including weddings, baby showers and birthdays.

Eckheart currently makes 17 different flavors of cheesecake, and she's got more in the works.

"I have lots of people ask to be taste testers. They are wonderful taste testers, and they are very critical if they don't like the crust or don't like the texture, they do tell me," said Eckheart.

Her most popular flavors are key lime in the summer and pumpkin around Thanksgiving.

She's still baffled as to how she became somewhat of a cheesecake expert.

"I don't know how I can make cheesecakes and no one else in my family can. I really don't know how I have the knack for it," said Eckheart.

She said part of her goal is to get people who don't like cheesecake to give hers a try.

"I've had so many people tell me I don't like cheesecake, I don't like cheesecake and I say try a bite and they love them. Now they get them all the time," she said.

Eckheart makes everything from scratch and works out of her home kitchen.

"I just enjoy being able to do it on my own time at home. I don't have anything huge and spectacular. I just have a regular oven and just a regular mixer," said Eckheart.

Eckheart said she's glad she bought that spring form pan spur-of-the-moment at a garage sale, but now, she doesn't need anymore pans.

She got ten, just at Christmas as gifts. BilliJo Eckheart is working on a web site for Cheesecakes Galore.
