Today's Sweet Tooth: Nancy's Truffles

IONIA (KWWL) A little taste of heaven, that's how Nancy Demro describes eating truffles. Demro began making truffles in 1996. She wanted to do something special for her daughter's wedding.

"I had always noticed truffles in candy shops. They intrigued me. I knew quite a bit about candy and did a lot of candy making over the years, but I had never made a truffle so I took the challenge," said Nancy Demro.

For the wedding, Demro created her now signature flavor, chocolate raspberry.

"It spiraled into 30 flavors and a business that is 365 days a year for me," she said.

Demro is licensed and works out of her home. She said from start to finish it takes three days to make a truffle.

"A truffle is a little gem of chocolate perfection and it has a creamy, silky, rich, luxurious center which they call ganache. The ganache of a truffle is different from other candies in that the base you begin with is chocolate. fine chocolate," said Demro.

She tries to make 250 truffles a week.

"Quality ingredients. That's the key. I don't scimp on any of the ingredients," she said.

Demro's busiest times are Christmas, Valentine's Day and Mother's Day, but she provides truffles to area businesses year-round.

"Somebody will call and say oh I tried your truffles nancy and I have never tasted anything like it. It's fun for me to get those calls because I'm here, making candy by myself. So it's fun to talk with customers," she said.

Demro said she just wants people to bite into her truffles and have an experience.

"A chocolate experience for them like no other they've ever had," she said.
