Apples: The Core to Healthy Eating Recipes

Crunchy Apple Coleslaw

Serves 12.

All you need

1 ½ cups Hy-Vee light salad dressing

½ tsp Hy-Vee ground ginger

2 tbsp Hy-Vee lemon juice

2 Granny Smith apples, peeled, cored and diced

1 (16 oz) bag Hy-Vee coleslaw mix

2/3 cup Hy-Vee raisins

¼ cup chopped green onion

1/3 cup Hy-Vee sunflower kernels

All you do

1. In a large bowl, stir together salad dressing, ginger and lemon juice. Stir in apples.

2. Add coleslaw mix, raisins, green onion and sunflower kernels. Toss gently to coat.

3. Cover and refrigerate 2 to 3 hours or until serving time.

Nutrition Facts per serving: 140 calories, 8 g fat, 10 mg cholesterol, 270 mg sodium, 18 g carbohydrates, 3 g fiber, 13 g sugar, 2 g protein.

Fresh Apple Sauce

All You Need:

8 cooking apples (Braeburn or Granny Smith), cored, peeled and chopped

½ cup sugar

1 tbsp. Hy-Vee ground cinnamon

Juice of ½ lemon

1 tsp. vanilla extract

All You Do:

1. Place apples in a 5-quart pot. Add sugar, cinnamon, lemon juice, vanilla and just enough water to cover half the apples (to prevent a watery sauce).

2. Bring apples to boiling; reduce heat and simmer until apples are soft.

3. Hand-blend or mash apples in pot to desired consistency. Serve warm or cold.

Apple Pecan Muffins

Serves 12

All You Need:

1 ½ cups plus 2 tbsp Hy-Vee flour, divided

1 teaspoon Hy-Vee baking powder

½ teaspoon Hy-Vee baking soda

¼ teaspoon Hy-Vee salt

2 ½ teaspoon apple pie spice, divided

2 Hy-Vee large eggs

½ cup low-fat apple granola yogurt

6 tablespoons Hy-Vee butter, melted, divided

1 ¼ cup plus 1 tbsp packed Hy-Vee brown sugar

1 cup peeled, cored, chopped sweet apples

¾ cup plus 1 tbsp Hy-Vee chopped pecans, divided

All You Do:

1. Preheat oven to 375 degrees. In a large bowl, sift together 1 ½ cups flour, baking powder, baking soda, salt and 2 tsp apple pie spice

2. In a medium bowl, whisk together eggs, yogurt and tbsp melted butter. Add 1 cup brown sugar and whisk to combine. Add to the dry ingredients and mix until just combined. Fold in apple and ½ cup pecans.

3. Divide the batter among a greased 12-cup muffin tin, filling each about 2/3 full.

4. In a small bowl, combine remaining flour, apple pie spice, butter, brown sugar, and pecans. Sprinkle about 1 tbsp of the crumb mixture over the top of each muffin. Bake until inserted toothpick comes out clean, about 25 minutes.
