Healthy Tailgating Recipes from Hy-Vee

"Big Apple" Turkey Sandwich

Serves 4 | Source: Try-Foods International


All you need:

¼ cup light mayonnaise

½ tsp. lemon juice

½ tsp. dried tarragon

½ tsp. dried thyme

¼ tsp. dill weed

8 slices Hy-Vee Bakery whole grain sandwich bread

12 oz. thin slices DiLusso deli turkey

1 cup thinly sliced red apple

1 bunch watercress or arugula

All you do:

1. In small bowl combine mayonnaise, lemon juice, tarragon, thyme and dill. Season with slat and pepper to taste.

2. Spread half the mayonnaise mixture evenly over 4 slices of the bread. Top with turkey, apple and watercress.

3. Spread remaining bread slices with remaining mayonnaise and place on top of watercress.


Nutrition Information per serving: 300 calories, 28g carbohydrate, 22g protein, 11g fat, 3g saturated fat, 6g fiber, 50mg cholesterol, 1300mg sodium

Edamame Hummus

All you need:

1 cup edamame, shelled and cooked according to package directions

1/8 c. Soybean oil

1 ½ T. lemon juice

1 tsp. garlic, chopped

3/8 tsp. cumin, ground

¼ tsp. salt.



All you do:

1. Puree edamame, oil, lemon juice, garlic, cumin and salt in food processor for 30 seconds, scraping sides twice, until almost smooth.

Cover and refrigerate until ready to serve.

Southwestern Pasta Salad

All you need:

½ pound uncooked penne pasta

1 can (15 oz) black beans, drained and rinsed

1 cup fresh corn kernels

¾ cup (3 ounces) shredded sharp cheddar cheese

½ cup diced onion

½ cup peppers (mild and sweet - any color)

½ cup chopped tomatoes

¼ cup fresh orange juice

2 tablespoons fresh lime juice

1 tablespoon extra virgin olive oil

1 tablespoon chopped canned chipotle chiles in adobe sauce


All you do:

1. Cook pasta according to package directions, omitting salt and fat. Drain and place in a large bowl. Add black beans, corn, cheddar cheese, onion, peppers, and tomatoes; toss well to combine.

Combine orange juice, fresh lime juice, extra virgin olive oil and chipotle chiles by stirring with a whisk. Drizzle over pasta mixture; toss gently to coat. Cover and chill.
