Zesty Penne Pasta Salad with Edamame

All You Need

8 oz (1 cup) whole wheat penne pasta

8 oz Zesty Italian dressing (fat-free)

½ cup diced fresh roma or grape tomatoes

¼ cup sun dried tomatoes (julienne sliced)

2 cloves garlic (minced)

2 oz crumbled feta cheese

2 tsp minced fresh cilantro*

2 tsp minced fresh basil*

1 cup edamame, thawed (green soybeans)

*Can use dry seasoning, but cut amount in half.

Preparation

Cook pasta according to package directions. Drain and cool. Add remaining ingredients and stir well. Cover and refrigerate for 12-24 hours, or as long as time permits.

Easy Spinach Calzone

Serves 16 (1 calzone each)

All you need:

8 ounces tofu, mashed

1 tbsp dried parsley

1 tbsp lemon juice

1 tsp onion powder

1/8 tsp black pepper

1 c. low-fat marinara sauce

5 ounces (1/2 package) frozen spinach, thawed OR 3/4 c. cooked spinach

2 packages (8 rolls each) refrigerated dinner roll dough

All you do:

1. Preheat oven to 375 degrees.

2. With clean hands, squeeze the excess liquid from the mashed tofu, one handful at a time.

3. Place tofu in bowl and stir in parsley, lemon juice, onion powder and pepper.

4. Bake about 15 minutes

Easy-As-Pie Cheesecake

Serves 8

All you need:

1 box no-bake cheesecake mix (to make 8-inch pie)

1 tbsp liquid margarine or 1 T. margarine, melted

3 tbsp to 4 T. water

3/4 c. soymilk

1 package (10.5 oz.) silken tofu

All you do:

1. Preheat oven to 350 degrees.

2. Combine graham cracker crumbs from box with liquid margarine (or melted margarine).

3. Add water, stirring well, until crumbs are evenly moistened. Put crumbs into 8-inch pie plate and pat evenly across bottom and up sides.

4. Bake crust for 15 minutes at 350 degrees. Remove from oven and let cool.

5. Put soymilk and filling mix from box into blender container. Cover and blend, scraping sides as necessary, until smooth.

6. Add well-drained silken tofu and continue blending until smooth. Pour filling into cooled shell.
